Distillation day at "La Vecchia Distilleria"

In recent days I was in Vallebona (Imperia), at La Vecchia Distilleria (the Old Distillery), a family business that produces outstanding essences of neroli and petitgrain, as well as sought-after "bitter orange blossom water" (Acqua di Fior d'Arancio amaro) with which several Chefs prepare gastronomic delicacies of the highest level. I was there because I had some helichrysum to distill and Pietro Guglielmi, the young owner had offered me hospitality. It was a really fantastic morning: in addition to the pleasure of spending some time with Pietro chatting about topics we both are passionate about, seeing the distiller come into operation was very exciting. What happens when water and fire begin to dance inside it, is something truly magical, no word can truly describe it.  I can only say that the result of this dance is Essence. Giornata di Distillazione alla "Vecchia Distilleria" di Vallebona

Nei giorni scorsi ero a Vallebona (Imperia), alla Vecchia Distilleria, azienda familiare che produce delle fantastiche essenze di neroli e petitgrain, oltre ad una ricercatissima acqua di fiori d'Arancio amaro -presidio Slowfood con cui diversi Chef preparano squisitezze gastronomiche di altissimo livello. Ero lì perché avevo un pò di elicriso da distillare e Pietro Guglielmi, il giovane titolare mi aveva offerto ospitalità. E' stata una mattinata veramente fantastica: oltre al piacere di passare un pò di tempo con Pietro chiacchierando di argomenti che appassionano entrambi, vedere il distillatore entrare in funzione è stato molto emozionante. Quello che succede quando acqua e fuoco iniziano a danzare all'interno del distillatore, è qualcosa di veramente magico, inesprimibile a parole.  Posso solo dire che il risultato di questa danza è l'Essenza. Al Vivaio Violarancio

Nei giorni scorsi ero ad Albareto (Provincia di Parma) al Vivaio Violarancio , un vivaio specializzato nella fornitura di piante officinali ed aromatiche certificate bio : lavanda e lavandini di diversi tipi, rosmarino, salvia, calendula, basilico, echinacea, achillea, artemisia, timo, valeriana, issopo, iperico, elicriso, camomilla e tantissime atre varietà.  I colori delle piantine appena nate sono magnifici, così come il profumo che si respira all'interno della grande serra. Se vi servono piantine piccolissime da trapiantare nel vostro giardino/terreno, da poche unità fino a decine di migliaia, tenete presente Violarancio, perché troverete una coppia di persone entusiaste e di gentilezza squisita che vi aiuteranno in ogni possibile modo. Her Majesty Tuberose

  Yesterday I received these Tuberose bulbs, a flower I love so much to see and -above all- to smell. Tuberose originates in South America, pre-Columbian peoples used to cultivate it both for its healing properties (it was said to ease the fatigue of travelers) and for gastronomic purposes: its intensely sweet scent was the ideal complement to the chocolate drink they used to drink. Sua Maestà la Tuberosa

Ieri ho ricevuto questi bulbi di Tuberosa, un fiore che io adoro sia per la sua bellezza che per il suo profumo. La tuberosa è originaria del Sudamerica, era particolarmente amata dai popoli precolombiani, che la coltivavano sia per le sue proprietà curative (si diceva che attenuasse la fatica dei viaggiatori) che per fini gastronomici: il suo profumo intenso e dolce rendeva speciale la bevanda al cioccolato che consumavano spesso.  Nel corso del Cinquecento gli spagnoli portarono la pianta in Europa ed iniziarono la sua coltivazione. Le fanciulle europee però, non avevano il permesso di avvicinarsi a questo fiore proprio a causa del suo profumo dolciastro, invitante, narcotico, che si diceva avrebbe scatenato in loro pensieri “illeciti” che le avrebbero condotte alla perdizione. Tuberose scents with Perris Monte Carlo and Adjiumi

Saturday, November 6 at the “ Beauty Concept ” store in Monza, I took part to the event "Focus on tuberose" where participants were able to sniff and discuss dozens of raw materials and perfumes tuberose-focused. First, our host Gian Luca Perris (founder of Perris Monte Carlo, website here ) invited us to enjoy a fantastic tuberose absolute , that surprised many for its leathery character, dry, salty, smoky, "bacon", which took more than twenty minutes to show a soft and delicate floral facet , which speaks of flowers in a shy and persuasive way. While the steam distillation collects the lighter, more volatile and fresher notes, the absolute extracts the flower scent in its wholeness , with all its warm, earthy, heavy basenotes. Rose de Taif (Perris Monte Carlo, 2013)

Per la sua fragranza alla rosa, Gian Luca Perris ha visitato i produttori di Taif (una ventina circa), ha chiesto campioni dell'olio, li ha fatti analizzare in laboratorio e poi si è accordato per poter acquistare partite di olio essenziale ( ho raccontato i suoi viaggi a Taif nei post precedenti: la storia inizia qui ).  Lo step seguente è stato la richiesta di certificazione dell'olio: in Europa, qualsiasi materia prima utilizzata in profumeria necessita di superare alcuni test di allergenicità per ottenere la certificazione. Finalmente, parecchi mesi dopo l'inizio di questa avventura, Gian Luca ha potuto dedicarsi a far comporre un profumo da inserire nella sua linea "Perris Monte Carlo".  

Perris Monte Carlo: Rose de Taif (2013)

For his " Rose de Taif " fragrance, Gian Luca Perris visited the producers of Taif rose (about twenty labs), asked for oil samples, had them analyzed in a lab, and then got an agreement to buy lots of essential oil ( I told his travels in Taif in previous posts, starting here ).  His next step was applying for the oil certification (in Europe, any component used in perfumery needs undergoing tests for certification).  Finally, several months after the start of this adventure, Gian Luca was able to devote time and thoughts to a fragrance to add to his "Perris Monte Carlo" line. The main feature of this line lies in the fragrances being built around a raw material of particular interest, well recognizable and highlighted by the other notes.

(questo post inizia qui ) E anche se non ci pensasse il costo proibitivo, a renderla preziosa, resta il fatto che di rosa Taif ne viene esportata pochissima : preferiscono tenerla per  loro ed  usarla, pura, per profumare il corpo, gli abiti, i capelli, gli ambienti dove abitano; evidentemente, millenni di cultura del profumo hanno affinato il gusto degli arabi, e lo hanno reso particolarmente esigente...

(questo articolo inizia nel post precedente ) Taif è una città dell'Arabia Saudita situata quasi duemila metri di altezza, nella provincia della Mecca. Sebbene l'area non sia distante dal mare, l'elevazione repentina delle montagne determina un clima diverso da quello delle regioni vicine; piove molto più spesso che nel resto della penisola araba e l'escursione termica è maggiore, e questo rende possibile coltivare fiori e frutta di ottima qualità. 

A trip to Taif with Gian Luca Perris (2/3)

(this article originates in the previous post ) Taif is a Saudi city located almost two thousand meters high, in the province of Mecca. Although the area is not far from the sea, the sudden mountain elevation provides an unique climate in the Arabian Peninsula: here it rains more often and the temperature range is greater, making it possible to grow flowers, vegetables and fruits of particularly high quality.  Like other kinds of hardy plants, roses, too, give their best when grown in a not completely favorable environmental condition , and two thousands meters are quite an altitude for this flower! The harvest starts around 4:30 am, and is performed by Pakistani or Indian workers, who only select  specimens that are just starting to bloom; collection ends up late in the morning and the flowers are immediately brought to laboratories -they're approximately twenty- for processing.  There, roses are not weighed, but... counted!  

A trip to Taif with Gian Luca Perris (1/3)

For the May meeting of my course I invited Gian Luca Perris (founder of Perris Monte Carlo - website here -) to join the party and speak about the beautiful perfume named " Rose de Taif " he launched last year. I could try at Pitti Fragranze; on that occasion he showed me the photoreport of his journeys to Taif in search of the legendary Taif rose producers. He went there because he wanted to import the precious nectar he needed for the perfume he was about to create. So I invited him to Genova to share his story with participants to my meetings, and he accepted. The meeting was extremely exciting, during the two hours il lasted Gian Luca told us how this precious rose is grown, harvested, processed, and he ended up with us swooning over it. He also provided other raw materials including a Saudi Arabian oud and a really wonderful, creamy, nutty cedarwood Atlas which reminded me of Mysore sandalwood a lot. Un profumo su misura per Dimitri

Per festeggiare l'uscita del nuovo romanzo Garzanti " Il Sentiero dei profumi" scritto da Cristina Caboni , il magazine Vanity Fair aveva invitato i lettori ad inviare una foto per condividere la loro idea di profumo ( link qui ).  L'autore della foto più bella avrebbe vinto la creazione di un profumo personalizzato, composto da me e Caterina Roncati nel laboratorio della Farmacia del Castello di Genova (ne avevo parlato qui ).  
Lo scorso 30 maggio, il vincitore del concorso,  Dimitri , è giunto appositamente da Roma per trascorrere qualche ora insieme a noi e partecipare alla composizione del suo "profumo perfetto".  Come primo step abbiamo dato a Dimitri il nostro "Percorso olfattivo" da compilare, cioè un questionario con una trentina di domande volte a scoprire i suoi gusti e le sue richieste. Non tutti sanno esattamente cosa vogliono e fare domande dirette spesso non è il metodo migliore per capire cosa si aspetta la persona da noi

Trento Filmfestival: 3 maggio ore 11/May 3rd at 11

In occasione della 61esima edizione del prestigioso Trento Filmfestival , la città ospiterà un ricco calendario di convegni, incontri con scrittori ed alpinisti, serate a tema ed eventi culturali. Tra questi vi segnalo quello di venerdì 3 maggio, alle 11 presso il Cafè de la Paix, Passaggio Teatro Osele, intitolato "Destinazione... Turchia: profumo d’Oriente" . A condurre l'incontro ci sarò io, che vi accompagnerò ad esplorare le spezie, le loro storie, il loro intenso, caratteristico profumo e come questo viene usato in profumeria. Osmotheque: Focus sulla Tuberosa (2/2)

(questo post inizia qui ) La tuberosa ha un carattere per nulla gentile o accomodante, è difficile accoppiarla con qualcosa che non ne condivide alcuno dei suoi aspetti! Ad esempio l'hedione o il bergamotto non sono adatti perchè la tuberosa non possiede accenti agrumati nè una freschezza cristallina... Le note animali o legnose invece vanno dosate attentamente per non mascherare il lato fiorito che la caratterizza. La tuberosa preferisce senz'altro essere affiancata da note di altri fiori bianchi, note fruttate o verdi. Siccome in questi ambiti molto è già stato detto, per non cadere nel "già sentito" oggi si tende ad affiancarle qualche molecola sintetica, come il salicilato di benzile che ne accentua la sfaccettatura "esotica" o note "salate" in grado di accentuare il lato metilico che la tuberosa condivide con gli altri fiori bianchi.

Osmotheque: focus on Tuberose (2/2)

(This post originates here ) Tuberose is all but an accomodating note: it is difficult to pair it with something that doesn't share any of its aspects! For example, hedione or bergamot are unsuitable because tuberose has no citrus accents nor crystalline light... Animal or woody notes would be tricky and should be dosed carefully not to cover up the floral facet. Tuberose certainly prefers the company of green or fruity notes and, above all, notes from other white flowers . In these areas much has already been said, and to avoid the "deja-smelled" effect, today's perfumers tend to rely on synthetic molecules such as benzyl salicylate which accentuates the "exotic" facet or "salty" notes highlighting the methyl side tuberoses share with other white flowers.

Osmothèque: Focus sulla Tuberosa (1/2)

Una delle più interessanti conferenze tra quelle in programma durante Esxence, aveva per oggetto un fiore che ha tanti innamorati quanti detrattori: la Tuberosa.  Emmanuelle Giron dell'Osmothèque ci ha guidati nell'affascinante esplorazione di questa nota, usata con parsimonia in profumeria  a causa della sua voce squillante come una tromba e un carattere aperto ed esuberante con un sottofondo leggermente misterioso che fa tanto "femme-fatale". La tuberosa è nativa del Messico, dove veniva tradizionalmente usata per profumare... il cioccolato! I suoi fiori sono di colore bianco perchè la tuberosa fiorisce di notte, quando i colori non si vedono ; per attrarre gli insetti impollinatori quindi, lei e gli altri fiori bianchi (tra cui gelsomino, fiordarancio, magnolia, ylang ecc) hanno dovuto ricorrere ad una strategia meno "visiva" ma altrettanto potente: un profumo così forte da stordire.

One of the most-expected lectures scheduled during Esxence was focused on tuberose, an essence having as many lovers as haters, and Emmanuelle Giron from  Osmothèque  had the task to lead us on a tour around this note. I love tuberose for exactly the same reason why others hate it: for her loud voice evoking a trumpet, for the opennes and exuberancy, with a slightly mysterious background. Tuberose is native to Mexico, where it was used to flavor ... chocolate! Tuberose flowers are colored white because they bloom at night, when colors are not visible ; to attract pollinating insects then, she and all the other white flowers (including jasmine, orange blossom, magnolia, ylang etc.) have resorted to a less "visual" strategy: a stunning perfume.

Chinotto in Fiore (Abaton)

Sapevo che il chinotto è un agrume bellissimo, intensamente dorato, usato nei giardini soprattutto a scopo ornamentale per i suoi fiori copiosi e profumatissimi. Sapevo che a Savona la storia del chinotto è importante, perchè i maestri canditori savonesi avevano saputo trovare un modo per trasformarne i frutti -troppo amari per consumarli freschi- in prelibatezze da gustare a tavola, e che per tutto l'800 e inizio '900, i chinotti canditi di Savona erano ricercati ed apprezzati in tutta Europa. Ma oltre che da mangiare, il Chinotto si beve anche: vi suggerisco quello di Lurisia ( sito qui ), presidio Slow Food dal gusto aromatico/tonificante, una delizia che in casa mia c'è sempre, visto che mio marito ne va matto.

Chinotto in Fiore/Blooming Chinotto (Abaton)

Chinotto, a kind of bitter orange, is a beautiful, intensely golden citrus fruit, especially used in gardens as an ornamental plant, due to its fragrant and abundant flowers. I knew the history of Chinotto in the city of Savona is important, because the “canditori” (confiteurs) had been able to find a way to transform its extremely bitter fruits into delicacies to be enjoyed at the table, which were appreciated throughout Europe throughout the '800 and beginning of' 900. But in addition to eating it, Chinotto may be enjoyed a drink, characterized by an aromatic, energizing taste. I suggest you to try the one by Lurisia (leftside pic, website here ): I always keep a couple of bottles home, as my husband is very fond of it.
